Cooking It Up! is a nutritious cooking show created by college and high school youth that emphasizes choosing fresh, whole foods rather than processed, boxed foods. It also focuses on food justice (the idea that quality food is a human right) and positive body image. The purpose of Cooking It Up! is to teach youth video production and culinary skills that align with their income level, culture, daily schedules, and neighborhood resources in order to show that healthy change can happen.

Eating The Rainbow

  • Eating a rainbow of colors at every meal is an easy way to make sure you are giving your body all the vitamins and nutrients it needs.  A diet full of vegetables is a great way to reduce your risk of cancer and other diseases.
  • Green foods, like the green beans in this recipe, keep your eyes healthy, and keep your bones and teeth strong.  Green beans contain Vitamin A, Vitamin C, and small amounts of Calcium and Iron.
  • Red foods, like tomatoes, are great for you heart and your memory.   They have lots of Vitamin A, C, E, B6 and K.  They are also a good source of Folate and Potassium.
  • White foods, like garlic, keep our cholesterol and blood pressure in check and our heart healthy.  Garlic has many wonderful properties, including Calcium, Vitamin C, Vitamin and B6 and phytochemicals.  Garlic is also anti-inflammatory, which may protect against arthritis and asthma.  Garlic also has strong antiviral and antibacterial properties and is often used to prevent or shorten the duration of infections.
  • Orange foods, like carrots, strengthen our immune system, keep our heart strong, and our eyes healthy.  Carrots contain Vitamin A and Beta Carotene.  Carrots were originally grown for medicine, not food, and helped cure many common ailments.
